Easy Fig Pizza

I was at the grocery store and saw these purple figs on sale and couldn’t pass them up to make this easy fig pizza.  I’m kind of intrigued with figs because of their beauty and they are kind of foreign to me unlike apples and bananas.  Figs are one of the oldest fruits on earth and are full of nutrients.  They are good enough to eat alone or add something special to the right dish.  So, I was sold.  This easy fig pizza is topped with fresh baby arugula and finished off with a honey lemon drizzle to add more texture and enhance the sweetness of the figs.  My husband voiced that he is now in full support of my blog when he saw this waiting for him after a long day at work.

Ingredients

16 oz pre-made pizza dough

3-4 figs sliced

8 oz fresh mozzarella cheese

3/4 cup ricotta cheese

3 oz prosciutto

baby arugula

1/4 of a red onion, thinly sliced

olive oil

salt

honey lemon drizzle

2 tbs honey

1 tb lemon juice

Directions

Preheat oven to 375 degrees F.  Roll out the pizza dough to about 10 inches in diameter on a lightly floured surface.  Line a baking sheet with aluminum foil and grease with olive oil.  Place the pizza dough on the greased aluminum foil.  Spread the ricotta cheese on the pizza dough and top with the prosciutto, sliced mozzarella, and sliced figs.  Lightly sprinkle with salt and drizzle olive oil over the top.   Bake for about 20-25 minutes or until the crust is golden brown.

Remove the pizza from the oven and scatter the baby arugula and red onions over the top. Mix the honey and lemon juice together and drizzle over the arugula leaves.  Enjoy immediately.
