Banana Bread

Banana bread is an easy way to use up overripe bananas.  I have a recurrent overripe banana problem at my house.  That’s when they are too ripe to eat alone but I don’t want to throw them away either.  I’m always looking for new ways to use up these browning bananas.  The smell and taste from this banana bread confirms that I made the right choice.

Ingredients

3 overripe bananas

1 cup sugar

1 stick unsalted butter

2 large eggs

2 cups all purpose flour

1 tsp baking soda

1/2 tsp salt

Directions

Preheat oven to 350 degrees F.  Mash the bananas with a fork.  In a separate bowl, cream the softened butter and sugar together.  Mix in the mashed bananas.  Add the eggs one at a time for easier mixing.  In a separate bowl, combine the flour, salt and baking soda.  Add half the flour mixture to the wet mixture and stir to combine.  Add the other half and mix until just incorporated.  Do not over mix!

Grease a 9×5” pan and pour in the batter.  You can decorate the top with more bananas but it’s optional.

Bake in the center of the oven for about 50 minutes  to 1 hour or until a toothpick inserted in the center comes out clean.

You can also use this recipe for walnut crumble banana bread.
