This walnut crumble banana bread recipe uses the same base as the plain banana bread recipe but, we just invited a few more ingredients to the party. It’s an easy way to make banana bread a little more special.
Ingredients
3 overripe bananas
1 cup sugar
1 stick unsalted butter
2 large eggs
2 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 cup chopped walnuts
Walnut Crumble
1/4 cup chopped walnuts
1/4 cup light brown sugar
2 tbsp melted butter
Directions
Preheat oven to 350 degrees F. Mash the bananas with a fork. In a separate bowl, cream the softened butter and sugar together. Mix in the mashed bananas. Add the eggs one at a time for easier mixing. In a separate bowl, combine the flour, salt and baking soda. Add half the flour mixture to the wet mixture and stir to combine. Add the other half and mix until just incorporated. Gently fold in the walnuts. Do not over mix!
For the crumble topping, combine the remaining walnuts, brown sugar and melted butter.
Grease a 9×5” pan and pour in the batter. Top with the walnut crumble.
Bake in the center of the oven for about 50 minutes to 1 hour or until a toothpick inserted in the center comes out clean.
