Cornucopia Pie

I made this cornucopia pie to celebrate pie season with Thanksgiving and Christmas within a few weeks of each other.  This was my first time trying to paint on pie dough and I think it turned out alright.  You can make your own pie dough or if you’re short on time like me, store bought dough will work too.  Keep reading if you want to find out how to be a pie Picasso.

Ingredients

Pie Crust

pie dough or 2 boxes of refrigerated pie crust

2 egg yolks

Food coloring

Filling

4 cups sliced apples

3/4 cup sugar

2 tbs cornstarch

2 teaspoons cinnamon

1 tsp lemon juice

Directions

Line a 9 in pie pan with the first layer of pie dough.  In a separate bowl, mix all the ingredients for the filling and place into the lined pie pan.  Cover the filling with the second layer of pie dough and press the edges around to form a seam.

Using a pizza cutter or rotary knife, cut 1 cm wide strips of dough to weave the basket part of the cornucopia.  I used various Wilton fondant cutters and tools to help me make the fruits and vegetables to go inside.

Then take an egg yolk and break it on a plate.  Add standard food coloring to the yolk until you get the desired shade.   You may want to use a tooth pick to add a little color at a time to get the right shade.  I found that one drop gave me too much color.

 

Paint the color onto the pie dough.  You can add more layers of color to create a gradient effect or mix them to add more depth of color.  If you want to be a little neater, you could put the yolk in separate containers before adding your food coloring to it.  Brush the rest of the pie dough with a little egg wash before baking.

Bake at 350 degrees F for about  50 mins or until the crust is golden brown!  Hope you enjoyed this and give it a try.  Please tag me in your photos on Instagram!  @diy_bucket_list
