Potato Salad

The first time I made this potato salad was for a beach picnic years ago at my sister’s bridal shower. I wanted something easy to serve and more special than chips to go with the sandwiches. This loaded potato salad is full of flavor and is a crowd pleaser every time I make it. Hope you give it a try at your next gathering!

Ingredients
1 1/2 lbs red potatos

2 celery stalks

3 boiled eggs

2 Tb cider vinegar

1/2 small red onion

Chives to garnish 

Dressing

1/2 cup olive oil mayo

2 tsp sugar

2 tb Dijon mustard

Salt

Directions 

Wash and cut potatoes into 1 inch size pieces.  Boil potatoes for 20 minutes.  While potatoes boil, dice the celery, red onion, and eggs.  Drain the potatoes and sprinkle in apple cider vinegar.  Add the diced veggies and eggs.  

In a separate bowl, mix the ingredients for the dressing.  Stir the dressing into the potato mixture and add chopped chives for garnish.
