Martha Stewart’s Peach Buckle

It’s peach season and this peach buckle recipe from Martha Stewart looked so juicy, I needed to try it! We took the kids to a farm nearby and grabbed a bag of peaches from their produce stand. I also picked up some apricots to add variety to the buckle. A buckle is kind of like a cake cobbler. I usually like to make desserts when we have guests or are being guests so I don’t eat it all myself. LOL! Keep reading to see how it turned out.

You can find the original recipe with instructions here. I followed the recipe for the batter closely. It kind of reminds me of a cake or pancake batter. Then instead of peach slices, I used fresh peach and apricot halves to be generous. LOL! I guess I also just really like peaches too.

I placed it in a preheated oven and baked as directed in the recipe. When I went to open the oven door, it was so bubbly and juicy! I really like how it browned nicely on top and the peaches are still peeking through.

This buckle had a cake and custard-like taste with some fruity tartness from the peach and apricots. It is best served warmed with vanilla ice cream or whipped cream for a well rounded dessert.
