German Chocolate Cupcakes

German chocolate cake is my brother’s favorite cake.  Growing up together, I’ve always known him to be a super picky eater.  So one day, I was surprised to see him go out to get the ingredients to bake a German chocolate cake.  We’re all grown and have moved out of my parents’ house.  But, for his birthday this year, I thought I would bake up his favorite cake in cupcake fashion and mail them to him in Michigan.

I came up with this easy cupcake recipe and added a special ingredient, coconut oil.

1 box German chocolate cake mix

3 large eggs

1 ¼ c. water

1/2 c. coconut oil

Preheat oven to 350°F or 325°F for dark pans.  Combine all ingredients and mix for 1-2 minutes.  I find the coconut oil really enhances and rounds out the chocolate flavor.  Line cupcake pan with paper liners and fill halfway with batter.  Bake for 14-19 minutes and cool before frosting.  Top with this classic coconut pecan frosting and not so traditional whipped cream cheese frosting.  You can add a drizzle of melted chocolate if you’re feeling fancy.
