Brain Parfaits

I’m bringing easy brain parfaits for a spook-tacular Haunted House Collab with a group of amazing bloggers!  I’m so excited to be part of this Halloween project!  Each of us created a recipe that we would take for a Haunted House themed party.  I decided to go with a dessert since it’s no secret that I have a sweet tooth.  🧁🦷 

Haunted houses make me think of words like creepy, eerie, spooky, bloody, etc…So, I made a dessert to go along with these disturbing thoughts.  

These brain 🧠 parfaits are so easy to make since I had some help from the grocery store.  It’s okay to have a little help when there are only 24 short hours in a day.  😆 

Ingredients 

1 pound cake

16 oz tub of Cool Whip 

2 c frozen strawberries 

1/2 c granulated sugar

1 tsp lemon juice

1/4 cup water 

Skull and bone sprinkles

Directions 

Thaw the frozen whipped topping in refrigerator.  Make the strawberry sauce by placing the frozen strawberries, sugar, water and lemon juice in a sauce pan on medium heat.  Stir often and press the strawberries against the side of the pan to break them down.  Cook for 15 minutes and use an immersion blender or regular blender to purée the mixture.  Strain to remove seeds.  

Mix a little of the strawberry sauce into half of the whipped cream until it’s light pink.  Fill a pastry bag with the mixture and use a small round tip or cut off a small tip if using a tip-less piping bag.

Cut the pound cake into small cubes and place in a disposable shot glass.  Pipe regular whipped cream over the cake and add the strawberry sauce on top.  Pipe the whipped cream and strawberry mixture into a mound and smooth the sides with a spatula or butter knife.  Then, pipe a straight line over the center of the mound.  Pipe squiggly lines on both sides of the mound to make it look like a brain.  

Finish with skull and bone sprinkles to make them gruesomely awesome! Brain food, anyone?
