Blackberry Banana Ice Cream

Blackberry banana ice cream is all natural and only uses three ingredients and a food processor.

Blackberries hold a special place in my heart because they bring back wonderful childhood memories.  My parents had a small patch of woods in our backyard where wild blackberry brambles grew rampant.  Every summer we looked forward to picking these little black jewels.  Just like their tart and sweet taste, their appearance at the end of summer evoked bittersweet feelings.

While I was out shopping this past weekend, I saw a neat farmers market off the side of the road and decided to make a quick stop.  I picked up a few local goodies including these enormous blackberries.  They were good enough to eat alone, but I felt like they deserved better treatment.  I found a few spotted bananas in my kitchen and thought I could work with this.  Blackberry banana ice cream is a healthy treat and perfect for celebrating this time of the year.

Ingredients

1 c. blackberries

2 medium size ripe bananas

½ c. orange juice or more

Cut banana into slices and freeze banana with blackberries.  Make sure to spread the fruit into an even layer when freezing for ease of use later.  Place frozen fruit, and orange juice in food processor and give it a whirl until you get something that looks like soft serve ice cream.  You could add a cherry on top or try this summer berry sauce.

When you make it in the food processor it comes out so smooth and creamy and it s done in seconds.  The banana acts as a natural sweetener so I didn t need to add any sugar.  If you taste yours and it seems tart and you want it more sweet add a bit of honey and give it another whir in the processor.  I topped mine off with some granola but generally I just eat it alone and I m totally happy.  It seriously doesn t get much easier or tastier than 2 Ingredient Banana Berry Ice Cream!
